Easy Pie for You Sweethearts
I got the sweetest heart ice-cube trays a little while ago on an Ikea outing with Sara + Andy (who, coincidentally, like to refer to Ikea-trips as "the relationship-tester", a point with which I can't disagree). Since generally I don't like their furniture aesthetic that much, I'm pretty much only in it for the little things from Ikea, anyway. Like heart-shaped ice cubes for my cranberry juice.
Since it seems Spring is officially here, and there is no more wavering and silliness of boomeranging from 40 degrees to 90 in the span of two days, I made Nigella's super easy key lime pie the other day, and we enjoyed it with the aforementioned Sara + Andy over a heated game of evening Scrabble.
I've blogged it briefly before, but just to freak out over how easy and good it is. As I was making it this time, I thought about the fact that many people might not have the Nigella arsenal at your disposal, and this pie is so absurdly easy and scarily tasty, it needs to be shared.
You need to gather:
-Ready-made graham cracker pie crust (you can be a fancy-pants, and make your own, but this is all about ease)
-4 limes
-1 Bottle lime juice (back-up juice for when your lime-squeezing isn't as fruitful as you would've hoped)
-14 oz sweetened, condensed milk
-1 1/3 cup heavy cream
Zest the limes as much as possible, and scoop the fruits of your labor into a large mixing bowl. Juice said limes, and if your juicing doesn't produce about 1/2 C + 2 Tbls juice (it probably won't), supplement with your bottled lime juice. Then, simply add both cream substances and beat well with an electric mixer until thick + creamy. The pie will not be green, but a light yellowy color...if you want a truly green pie you'll have to break out the food coloring.
Pour into prepared crust and chill at least 30 minutes before serving! This pie is a bit "custard" like, so don't think you've failed if it is very light and doesn't have an extremely solid consistency.

Also, I must admit, I'm a huge Nigella fan! In fact I've been making recipies out of her "Forever Summer" book and am in love. There's a wonderful minestrone, with pesto (my first time making this, couldn't believe how easy it was!) ....a lovely lemon chicken reicpe...and...that's just the beginning.

All that white canvas furniture in IKEA makes me want to bring a group of artists there in the middle of the night with a ton of fabric paint.

I had to share my good fortune at the Goodwill yesterday with everyone that will listen. I was checking out the purse selection (I have a real sickenss where totes are concerned.) I have a bajillion, but always have to have one more...When what to my eyes should appear, but a heart dangling from a leather strap off a purse handle. I thought Brighton? I saw the price tag still attached with the $110 on it. I checked inside...official seal...check...serial number...check...what is this inside the packet? The card to mail in to register the bag.....SCORE!
What did I pay for this brand new Brighton bag you ask???? $4.00! There must have been a man pricing the purses that day.

The pie looks great! Definitely will make it. I just love Nigella and how she comes up with pretty quick, sort of painless to make but wonderful to eat recipes--I have one cookbook but I'm not sure if that recipe is in it. The Gocco was so cute! I was out of town briefly and missed them so looking forward to next time. Ikea--there is one pretty close by and I should go more for the little stuff--they do have some good pillow covers if you have some ugly pillows to cure (bought some for my mom), and a lot of little kitchen gadgets that are very cute--that would include the very adorable heart shaped ice cube trays!

yes- the little things at ikea are so great! i'm with you, though- as far as the furniture, no thanks! and YES its is indeed a relationship tester...only because he just follows me around. honey, it's YOUR house too! help me out here!

That's so true about Ikea! The last time that my husband and I were there, we managed to stop arguing for long enough to realise that the two couples around us were fighting too :)
